Happy All Hallow’s Eve to all Goblins!

The autumn is such a wonderful time of year in this part of the world (Eastern Canada). The wonderful colours of the leaves in the forest and on the large tress lining our streets, ranging from yellow ocher, burnt orange, to fiery red, are so rich and cheerful! And the outdoor markets are filled with colourful seasonal produce, including all the different types of winter squash that are wonderful to use in cooking and decorating!
That's me, a few years ago, with a bunch of squash "geese" in Montreal's Jean-Talon Market!  Pumpkin anyone?!
While the evenings get a little cooler, there are still lots of warm sunny days ~ just perfect for preparing all sorts of comforting dishes, hearty bakes, harvest breads, cakes, cookies, and other baked goodies. Then of course, there is one of the world's oldest holidays, All Hallow's Eve or Halloween as it's more commonly called ~ a great reason to have fun!

The essential elements of Halloween, such as costuming, trick-or-treating, lighting bonfires, telling ghost stories, and attending community parties can be traced back 2000 years ago to the ancient Celtic festival called Samhain (SOW-in or SOW-an), which means “summer’s end.” As the second major seasonal festival of the year (the first was called Beltain, celebrated around May 1st), Samhain marked the death of summer and the beginning of the Celtic New Year (Rogers 2002). Naturally, one of the most fun elements of Halloween for any foodie like me is making all sorts of goodies for  the little and bigger goblins around us! This year, I took a cake decorating course at the Academie Culinaire in Old Montreal, and we created a Halloween themed cake. Our Chef, Eleni, was great fun and as sweet as the cakes we were decorating! She suggested a spider and cobweb design, so here is my decorated cake:


The cake is a light genoise which I split into 3 layers. I sandwiched the layers with vanilla pastry cream, then covered the cake in Swiss meringue buttercream, before decorating it with thin fondant. The body of the spider is almond paste that I molded by hand. Yummy and quite light!

I also made dozens of large and mini Pumpkin Spice Cupcakes with Salted Caramel Buttercream (all home-made of course, including the caramel à la fleur de sel), which I distributed to friends, family and neighbors. And oh my! These were such a huge hit! The cupcakes were based on a Martha Stewart recipe, although I changed the preparation technique completely (I'll be posting the recipe in another post on my gourmet webzine, www.EpicureanPiranha.com); and the icing is a simple buttercream blended with lots of salted caramel (i.e. caramel à la fleur de sel). I found some fun decorations this year ~ little pumpkin food pics and the tiniest black candy bats for decorating cakes ~ so this is what my mini Pumpkin Spice Cupcakes with Salted Caramel Buttercream looked like:


Last year, I had made these cute little mini dark chocolate cupcakes, and had lots of fun making tiny almond paste pumpkins to decorate them:


The recipe for these intensely fudgy, chocolate cupcakes was from Martha Stewart, and I decorated them with a very light vanilla buttercream; sure to tame even the most evil of witches and goblins!

Take my lips ...

… I want to lose them

I wanted to create a scrumptious, romantic dessert for Valentine’s Day. After tasting these wonderful little cakes, I christened them Melt Your Heart Pistachio Cupcakes. Rich and tender, flavoured with a large proportion of ground, roasted pistachios and blue curaçao (a bitter orange flavoured liqueur), they are crowned with a cloud of silky, white chocolate Swiss meringue buttercream ~ flavours and taste sensations that melt your heart!

Perfect for ♥ Valentine’s Day ♥, especially when decorated with lots of tiny, red lips :-)

Note ♥ Actually, these aren't very sweet ~ the beauty of Swiss meringue buttercream is that it's made from a cooked meringue to which you add butter - so, no raw sugar taste, and very little sugar compared to simple buttercreams made from powdered sugar which can be overly sweet and heavy. Just silky buttery cream, light as a cloud because of the meringue. And the delicate, moist cupcakes really taste of pistachio and butter :-)

Whimsical Christmas Fairy Cupcake

One of the many stunning cupcake (or should I say sculptural?!) entries at Cupcake Camp Montreal 2010 last Sunday, 21st November, at the Queen Elizabeth Hotel in Montreal. Unfortunately, all I know is that it was an entry by one of the many superb professional bakers participating. Doesn't this little sugar fairy look adorable sitting on her plump, pillowy clouds of buttercream?!

I added the burnt orange snowflakes using a PS paintbrush effect.

Epi's Caramel Vanilla Kiss & Devil's Delight cupcakes

Wow! Managed to get into Cupcake Camp Montreal 2010 (CCMTL 2010) at the Queen Elizabeth (Montreal, Que) this afternoon (ie: 21st Nov 2010). There were thousands of people!!!

Thanks to the great show of support, to the volunteers and bakers who donated thousands of cupcakes in all, to the celebrity judges, and to the great team at the Queen Eleizabeth, CCMTL 2010 raised $31,000 for the two charities "Jeunesse J’écoute" and "La Tablée des Chefs"! Bravo everyone :-)

I baked over 100 of the yummy cupcakes you see above for CupCakeCamp Montreal last year. The Devil's Delight were an intense, fudgy chocolate cupcake with Swiss meringue salted caramel buttercream, and Vanilla Kiss were made with a rich, buttery, vanilla cupcake. This year, sadly, I was unable to contribute cupcakes ~ but I was there to bring support by buying some, and did manage to get a few photos! It was an awesome event. Also had the pleasure of meeting up with a few Flickr and blogger friends :-)

I'll be posting more photos along with the recipes for my Devil's Delight cupcakes over the next few days, so come back soon!
